NUT503 - Food Science, Technology and Services
This unit addresses theory and practice of food science and technology in order to develop an appreciation of the role of food production, supply, and preparation in influencing the composition of foods and their impact on human health. Principles and practice of food safety legislation, and the scope and role of Australian food regulatory bodies will be covered. Students will apply their knowledge of food science and technology as it applies to nutrition in the planning of food services (e.g. child care, aged care, school settings). All students need to submit pre-project documentation prior to the commencement of the semester in order to undertake their project and successfully complete the unit.
